Your favorite superhero and why

I gotta admit, I never had a favorite super hero growing up. I'm trying to come up with a good super hero for me to choose, or even just somebody super cool..

Ok, got it. This guy!! For no reason besides the fact that he's awesome. 


My Favorite Shrimp Pasta Recipe

Let me start by saying that I love to cook. It's one thing that I can do well, besides just be an all around badass, but that's neither here nor there. This is what my night looks like at this current moment (except instead of Michael Buble, it's my Motown station). This Shrimp pasta is one of my favorite recipes. I have it just about every week because it's so good, easy, and it makes enough for me to take for lunch the next day. It's kind of like Shrimp Caprese from Olive Garden. I'm tellin ya'll, you've gotta try it!!

Ingredients

  • 1/2 cup Olive Oil
  • 4 cloves Garlic, Minced
  • 3 whole 14.5 Ounce Cans Diced (or Whole) Tomatoes
  • 1/2 cup White Wine
  • 2 pounds Jumbo Or Large Shrimp, Peeled And Deveined
  • Salt And Pepper, to taste
  • Fresh Parsley, Minced
  • 1 pound Linguine, Uncooked
  • Red Pepper Flakes, to taste

Preparation Instructions

Cook pasta for 1/2 the recommended cooking time. Pasta should still be very firm.
In a large skillet or pot, heat olive oil over medium heat. Add garlic and saute for a minute. Dump in the tomatoes and wine. Stir the mixture together, season with salt and pepper, and allow to cook for ten minutes.
Meanwhile, prepare a large parcel of heavy duty aluminum foil. It should be large enough to hold the entire pasta dish.
Throw the shrimp on the top of the pasta sauce. Throw the drained pasta over the top, then pour the whole dish onto the foil. Tightly wrap the foil into a parcel.
Bake at 350 degrees for 15 minutes. Remove from oven and keep warm until serving.
Open the foil parcel right before serving. Drizzle a tiny bit of olive oil over the top. Squeeze on lemon juice, if desired.

Ugh. I can't just pick one favorite place or vacation. Although, I haven't ever been anywhere too far. So queue the montage of random vacation and trip photos ;)

Just about every Summer, my roommates and I would spend some quality time on Hilton Head Island in Ashlyn's mom's company condo. Boy, oh boy how I'd love to be on a warm sunny beach right about now.



Key West and the Bahamas for an end of the semester cruise with Ashlyn's family. So much fun. I can't wait to go on another cruise. 



For fall break one year, three of us went to Wilmington, NC to see the sets of our favorite TV shows, Dawson's Creek and One Tree Hill. Luckily, while we were there we actually got to watch them film some scenes for OTH which included a lot of our favorite cast members! We even ate at a few of the restaurants used as sets on the shows. I'm still talking about the BL fried green T I had for lunch on the river walk. If you ever get a chance, Wilmington is a gorgeous city! It's super cool now being able to recognize places from the show.

Blue Ridge Mountains
Well, this is a place that is pretty much become routine for us. Billy's family has a cabin in Blue Ridge, so we are in the mountains very frequently. This is Mine and Billy's traditional Christmas Eve picture we take while we travel between our families. It's one of my favorite views along the way.

I hated skiing, and I will probably never go back. It was -9, and my gloves apparently weren't as waterproof as the tag said it was. I was miserable and I sucked at skiing.

Weekends are way too short

Last night Billy and I had the first date we've been on in a while. We'll go to dinner and stuff, but rarely is it a thing where he comes and picks me up and we make an afternoon or night out of it and do something fun besides just grabbing dinner. I forgot how much I missed it!!
Well, I told him I was done coming up with ideas of things to do, so what we did was completely up to him. His idea: Gun range! :) It had been a while since I had shot (too long), and he's been carrying a lot more and wants to brush up on his skills as well. Mostly, who doesn't like to blow holes in stuff?!
So here's a montage of our date:

After my first round, I didn't do so hot. I was fondly reminded that I need to practice more often, especially because I do conceal carry about 80% of the time. Thank goodness the range by my apartment has ladies day on Thursdays, so my range time is free and all I have to pay for is ammo and targets. So I will be back to visit soon!

and then on to my favorite part of the night.. Dinner! I did actually have to chime in my opinion at this point. I  have this addiction you see, to sushi. If I don't get it at least once every week to two weeks, I go into withdraws and I get the shakes (ok, maybe that's exaggerating) but I needed to quench my hunger. so sushi it was! We tried a new place, the sushi was good, but amount to price wasn't near as appealing.. so I think we're going to continue going to our traditional sushi date night place, Ru San's, from now on. 


Today, we had to go up to the mountains to check on the cabin and get the mail that was piling up. We got up there and remembered how much it snowed up there Friday. We knew it had snowed about 2 inches, but that didn't quite register with us how much two inches was going to be when we arrived.. The back road to the cabin was covered in fluffy white snow :) It was very pretty to see. Typically, I hate winter and snow and anything cold, but this was nice because it was at least a tolerable temperature and I didn't have to get out in it.










After we got there, did a quick check, and dropped off the puppies, we went into town for lunch and a fried pie at Merciers. Get used to hearing me talk about Merciers. I love that place, and I have to visit every time I am in town. After we got back, we took the beasts for a hike and this was our view once we got to the top of the ridge behind the cabin. Gorgeous, right? I just love if up there. It's so hard to leave every time. 





Sadly, it's back to the real world now. This week should go by quick. Tomorrow we celebrate my coworker's last day before she is scheduled to deliver, we have our quarterly staff meeting and awards, TRIVIAAAA, and then this weekend Billy and I will celebrate our 3 year anniversary and an early valentines day since we will be celebrating bigger things on the 14th, like their season opener!

A habit you wish you didn't have

We all have bad habits. Personally, I have many. I have a lot that I'm not willing to admit to, I have some that I'm not willing to give up, and I have some that just aren't healthy. One of the habits I wish I could kick is the fact that I worry sometimes over things that I shouldn't. I stress about things that I know honestly, will eventually work themselves out regardless of how much thought I put into it. I am a planner, and therefore am I always looking ahead trying to work out every last and final detail of what's to come. I do tend to be very, go with the flow when my plans get changed--unless it's something I was reaaaaally looking forward to. However, between now and the time that those plans change or come to pass, I will sometimes pick and mull over some things way more than a girl should.

Happies
Work took our entire department out for lunch yesterday. I haven't mentioned it yet, but I love my company and my coworkers, so time getting to spend with them outside of work without an agenda is always a fun time.

Billy's Valentines day present came in the mail this week. I opened it up to find out they gave me two instead of one!

End of the year bonus letters came out this week!! I didn't even know we got end of the year bonuses, so this was a nice surprise. 

One of my sweet co-workers brought me breakfast when they found out I was going to be in our Alpharetta office for the morning. Absolutely made my day!

I'm happy to have my cozy electric blanket through all the cold nights (and mornings like right now) that I can stay snuggled up under it. I hate cold weather.

Crappies
Yesterday I sent out a firm-wide email with a calendar attached only to realize I misspelled February and messed up 2 dates. I changed the spelling and corrected the dates, only to receive a dozen responses telling me I still didn't spell it write.. How embarrassing for the spelling Nazi to screw that up.

Um, hello? Have you not seen this weather!?

Not being able to see Billy all week because of baseball tryouts this week. I guess now I can change my relationship status to widow and Casey's to orphan.

Trivia got canceled due to the tornadoes. :( How nerdy does that make me sound? I don't care. I love my trivia nights, because my friends are cooler and smarter than yours.

Day 2
The meaning behind your blog name

Well, I have a confession. I highly doubt this current blog name is going to stick around for long. It was just the first thing I could come up with when I was brainstorming, and it just sounded a little bit better than "Megan." Drab sounding, isn't it?
This is a phrase from a song that I immediately fell in love with the first time I heard it. I begged, begged, and BEGGED the label, management, and the artist to put it on the album we were working on at the time. Luckily, they finally decided to throw it on there! (Insert happy dance here) Barefoot Blue jean Princess was a cute, phrase that I thought might could put a quick synopsis of myself into the title. 
I'll see how I feel about it in a few weeks, or if I come up with  better idea between now and then.
